Ingredients:

  • 2 onions
  • 2-3 lbs chicken (of any kind. Do more for skin-on/bone-in)
  • 2 cloves garlic
  • 3 Tbsp oil
  • 1.5 Tbsp paprika
  • 1 tsp cayenne
  • 2 tsp cumin
  • 2 tsp oregano
  • 1/2 cup raisin
  • Salt to taste

Instructions:

  • Heat olive oil in pan on medium heat until shimmering.
  • Dice onions and sauté in the olive oil until translucent. Salt relatively heavily.
  • Add spices and garlic, stir and cook until fragrant, 2-3 minutes.
  • Add onion/spice mixture to chicken and a quarter of the raisins in large pot or slow cooker.
  • Cook on low for 2+ hours until chicken is falling apart tender.
  • If using bone-in, remove chicken pieces carefully. Either way shred chicken and mix well.
  • Add the rest of the raisins, stir well. Adjust salt to taste.
  • Either make into empanadas, or just eat over rice.
