Ingredients:
- 2 onions
- 2-3 lbs chicken (of any kind. Do more for skin-on/bone-in)
- 2 cloves garlic
- 3 Tbsp oil
- 1.5 Tbsp paprika
- 1 tsp cayenne
- 2 tsp cumin
- 2 tsp oregano
- 1/2 cup raisin
- Salt to taste
Instructions:
- Heat olive oil in pan on medium heat until shimmering.
- Dice onions and sauté in the olive oil until translucent. Salt relatively heavily.
- Add spices and garlic, stir and cook until fragrant, 2-3 minutes.
- Add onion/spice mixture to chicken and a quarter of the raisins in large pot or slow cooker.
- Cook on low for 2+ hours until chicken is falling apart tender.
- If using bone-in, remove chicken pieces carefully. Either way shred chicken and mix well.
- Add the rest of the raisins, stir well. Adjust salt to taste.
- Either make into empanadas, or just eat over rice.
